Tomato Tartar with Spicy Guacamole
Remove the avocado meat, mix with the other ingredients until you get a purée and season to taste. Refrigerate.
Clean the tomatoes, remove skin and seeds, dice finely, and place in a sieve for a few minutes. Mix the shallots, chives, oil and vinegar in a bowl, season, add the drained tomatoes and mix.
Pour the tomatoes into 4 glasses and top each glass with guacamole.
Serve with a quarter lime.
