Tomato Tartar with Spicy Guacamole

For 4 people
  • 3 tomatoes
  • 3 chopped shallots
  • 5 sprigs chopped chives
  • 2 tbsp olive oil
  • ½ tsp Balsamic vinegar
  • 1 lime
  • Salt
  • Freshly milled pepper
  • Guacamole: 2 ripe avocados
  • the juice of 1 lime
  • 1 tbsp olive oil
  • A few drops of Tabasco sauce (optional)
  • ½ tsp Balsamic vinegar
  • Remove the avocado meat, mix with the other ingredients until you get a purée and season to taste. Refrigerate.

    Clean the tomatoes, remove skin and seeds, dice finely, and place in a sieve for a few minutes. Mix the shallots, chives, oil and vinegar in a bowl, season, add the drained tomatoes and mix.

    Pour the tomatoes into 4 glasses and top each glass with guacamole.

    Serve with a quarter lime.
